Garlic Scape Pizza

Ingredients:

6-8 garlic scapes with stems
3-4 cloves of garlic
½ half medium onion
½ half fresh red pepper
½ half fresh yellow pepper
3 oz fresh spinach
10 fresh cherry  tomatoes sliced in half
½ cup Mozzarella cheese
½ half cup cheddar cheese
1 12-inch baked pizza crust
3 to 4 oz tomato paste
5 inch stick of sliced pepperoni

Preparation:

Slice peppers, onions, garlic, and garlic scapes into small sections.
Sautee with butter and set aside to cool.
Spread tomato paste on pizza crust, and sprinkle on mozzarella cheese.
Make a bed of spinach over the mozzarella cheese.
Cover spinach with sautéed vegetables.
Sprinkle on cheddar cheeses.
Add sliced pepperoni
Cover with fresh tomatoes
Sprinkle top of pizza with Parmesan cheese
Bake at 350 F for 20 to 25 minutes

Suggestions, substitutions or additions:

Buy prepared pizza crust or make your own.  If you prepare dough, bake ahead
of time and use fresh or freeze for later use.
Use garlic scapes young as possible and include some of the stems.
Add hot pepper seeds while sautéing vegetables.
Use about a pound of hot Italian sausage cooked to a crisp in a skillet in
place of pepperoni, or go meatless.
Any of the ingredients may be increased or decreased depending on taste.
